Melbourne restaurant favourite, Meat Fish Wine, have recently announced that Darren Mercaldi has been appointed as their new Head Chef, alongside current Executive Chef David Schofield. Together they will be creating a range of modern Australian dishes from a range of influences.
Mercaldi’s 17-year career has seen him cooking in some of Melbourne’s most prestigious restaurants including Vue de Monde, Circa, Nobu and General Assembly.
“I love to cook modern food, create new dishes and try new ingredients and flavour combinations. Nothing makes me happier than a customer saying ‘Wow that was delicious.’ It’s my job to make every customer feel that way, and I love it!”, says Mercaldi.
“I’m thrilled to have Darren on board in Melbourne,” says Executive Chef David Schofield. “He is an exceptionally talented chef and we share a commitment to using the best of fresh, local, seasonal produce in the kitchen. With Darren on board I can confidently work on our next project – opening Meat Fish Wine Auckland later this year.”
Mercaldi is not the only new face at Meat Fish Wine, with industry veteran Giuliano Chiappa coming on board as the Restaurant Manager and Matthew Lamb (ex Head Sommelier, Vue Due Monde) also joining the team.
“From the beginning of my career in hospitality I have been trained to put customers first,” says Chiappa.
“There is a simple equation we follow from the moment a customer enters the restaurant. Great food, plus great service, equals a great night out. It’s important to listen, make the right suggestion for each diner and remember everyone is a VIP,” Chiappa says.
With a love of sharing his knowledge on all things wine and beverage related, Lamb is training his team on the wines, spirits and non-alcoholic beverages from all around the world that Meat Fish Wine offer.
“At the end of the day, the dining experience is all about guests having fun and enjoying themselves – and I like to help them do that with a delicious cocktail, incredible bottle of wine or intriguing non-alcoholic creation,” says Lamb.
