Juliana Mare brings Trading Plates readers an exciting ‘green‘ recipe the kids will love.  To coincide with green action hero The Hulk from the new Avengers movie in cinemas now, children both young and old will go crazy for these tasty little green spinach pancakes.

If you’ve ever had a morning where half of your brain is telling you to eat healthy and include those greens in your diet and the other half of your brain is screaming “pancakes,” here’s a solution. You’re welcome.

Spinach pancakes where you can’t actually taste the spinach and the raw pancake batter, blitzed in my NutriBullet tasted good enough that I was tempted to just drink it!

Whip up a batch of these bad boys and the toughest question you’ll be faced with on Saturday morning is whether spinach pancakes go better with fresh fruit or something savoury like cheese or bacon. 554f

INGREDIENTS:
1 ½ egg whites
1/4C unsweetened almond milk
60g banana, mashed
25g spinach
40g rolled oats
1/2tsp cinnamon
1/4tsp baking powder

METHOD:
# Blitz oats in a blender until you achieve a flour-consistency.
# Add spinach, egg whites, banana, almond milk, cinnamon and baking powder to blender and mix until blended thoroughly.
# Heat frying pan and spray lightly with olive oil. Spoon mixture into frying pan and cook for approximately 90 seconds each side.
# Add toppings and enjoy!
Yields 8 silver-dollar sized pancakes.
