One of the most popular tourist hangouts and local nightspots in Melbourne is undoubtedly the suburb of St Kilda.
With beachfront bars to enjoy Sunday sippers in the sun, a range of night clubs, live music venues and restaurants, St Kilda is a go-to destination for many.
One of the restaurants adding to the food scene in the area is Metropol, especially if you enjoy a great value steak special on a Thursday night!
Not only does Metropol do delicious food, but they have an outdoor space which is perfect for a hot summer’s night. It is a favourite haunt of one of Melbourne’s most popular DJ’s – Jacob Malmo, who serves up funk, house and disco for everyone to enjoy.
Metropol chef Nicolas Martigny and co-owner Anthony Jacobs kindly answered some of the questions Trading Plates had for them about the evolution of Metropol and why people keep coming back!
How did you come up with the concept for Metropol?
“It was the brain child of Melbourne socialite Elizabeth Brabender (who is the other co- owner), who’s trip to Argentina gave her inspiration to bring that South American flare to Melbourne.”
Nicolas, what is your background in food?
“I originally hail from Montreal in Canada. I trained in Montreal before working in various restaurants and 5 star hotels through Canada.
“I then relocated to Dublin and continued to develop my craft in fine dining and international cuisine.
“After three years in Abu Dhabi, UAE, as an in-flight chef for first class Etihad Airways, I finally moved to Melbourne in 2013 and joined the team at Metropol.”
How are the dishes devised?
“We like to design simple tasty dishes presented with a modern flare.”
What things are important to you when choosing ingredients?
“We like to support local farmers by using local and seasonal produce such as Gippsland Black Angus beef and Yarra Valley fruits and vegetables.”
How often does the menu change and why?
“The menu changes with the seasons. With the extreme changes in Melbourne’s seasons it’s important to adapt the menu accordingly.”
What are the most popular meals and drinks on your menu?
“The Crispy Pork Belly and Chorizo with caramelised cider vinegar glaze, orange and rosemary is very popular and Beef Tartare of hand chopped eye fillet with Dijon mustard, cornichons, coriander and shallots served with house made waffle chips and black garlic aioli.”
