We tackled nibbles, we sampled the sweet stuff with dessert and now it is time for the main event – the Christmas roast. 

It is always nice to know what the celebrity chefs are serving up to their friends and family on Christmas Day, so we have tapped into their personal stash of Christmas recipes, so you have plenty of time to prepare for the festivities.


Stephanie Alexander’s prawn salad with asparagus and mango

You will need:

8 small handfuls very fresh salad leaves
3 tbsp extra virgin olive oil
2 tsp orange juice
1 tsp red wine vinegar
salt, pepper to taste
24 medium green prawns, shell on
3 mangoes
8 spears asparagus, medium thickness, tough ends discarded
2 tbsp parsley, coarsely chopped
1 tbsp mint leaves, finely sliced

Jamie Oliver’s Roast duck with spicy Christmas rub and Marsala gravy

1 duck (roughly 1.6kg)
Sea salt
Freshly ground black pepper
2 heaped teaspoons of five-spice
1 clementine
6 fresh bay leaves

1 bulb of garlic , halved across the middle
2 carrots , trimmed and sliced
2 red onions , peeled and sliced
3 tablespoons plain flour
100 ml Marsala

Heston Blumenthal’s ultimate Christmas roast potatoes

2.5kg large maris piper potatoes, peeled and
cut into quarters (roughly the same size)
10 rosemary sprigs
14 thyme sprigs
18 garlic cloves, bashed with a knife
500g beef dripping
500g olive oil

½ rosemary sprig, leaves picked
1 thyme sprig

Nigella Lawson’s red seasonal salad

500 grams cold cooked turkey (shredded)
2 red chillies
1 clove garlic
2 tablespoons caster sugar
3 teaspoons rice wine vinegar
Juice of 1 lime
4 tablespoons thai fish sauce (nam pla)

Black pepper
700 grams red cabbage
250 grams radishes
5 tablespoons chopped coriander

Jamie Oliver’s cauliflower and broccoli cheese

2 cloves of garlic
50 g unsalted butter
50 g plain flour
500 ml semi-skimmed milk
500 g fresh or frozen broccoli
75 g mature cheddar cheese
1 kg fresh or frozen cauliflower
2 slices of ciabatta or stale bread
2 sprigs of fresh thyme
25 g flaked almonds
