I got my hands on the new almond flavour – Lime & Chilli – from Almond Breeze.
They seriously know their stuff because these nuts seriously pack a lot of flavour! Lime and Chilli is a classic combination but I took it to a new level in this recipe.
Lime & Chilli almond crusted prawns
15 Jumbo King Prawns (peeled)
1 can Almond Breeze Chilli & Lime Almonds
1 TBS ground chilli
Squeeze the juice of one lemon into a bowl and whisk through the ground chilli.
Pour over prawns and let marinate for 15 minutes.
Crush almonds in a pestle and mortar or blitz in a blender if you prefer a finer crumb.
Put three prawns on each skewer and press firmly down into the almond crumb.
Cook on a hot grill for a few minutes each side, or until prawns turn a light orange colour.
