The creative geniuses behind Hawthorn haunt Crabapple Kitchen are opening a new Italian inspired restaurant called Vaporetto. 

Together, Greg Feck, partner Kim Cronica, Stephanie Edgerton and David Wickwar fell in love with the idea of bringing their travels to life in the form of food and good old-fashioned hospitality.vaporetto tirimasu

It was only natural they collectively chose Venice as their destination; a place each one had fell in love with once upon a time. And so Vaporetto was born.

To celebrate this new venture and give locals a taste test, Crabapple Kitchen held a VIP Vaporetto Pop Up night on Saturday, April 9.

They disguised the usual cottage-like café as a Venetian retreat, offering a sample menu of what’s to come when the real deal opens.

The English translation of Vaporetto is Water Bus. Not a bad name for a restaurant that will transport you straight to Venice after one bite.

The new eatery menu will offer up true Venetian cuisine. Forget your carbonara’s and boring Bolognese; Vaporetto will serve a lot of seafood dishes, reminiscent of the fresh produce used from the Laguna Veneto.

Dessert also stays true to its origins, but with a touch of playfulness; think deconstructed Tiramisu, and rosewater and pistachio filled fritole (doughnuts) with Italian hot chocolate you could drink from the jug!

The drinks list will host a range of Italian and Australian wines and beers, with a strong focus on boutique selections from the Veneto region.

If you feel like something a little different, there are some exquisite cocktails on offer, including an unbelievable Negroni made with our favourite local drop Four Pillars Gin. While this Pop Up event was not in Vaporetto’s official home in the Lido Complex, the new location does sound like a portal to Venice. Picture dark timbers, an old tobacco shopfront, and hand-blown Murano chandeliers in The Bar, and a more casual yet elegant affair in The Eatery.

Anyone that has been to Crabapple Kitchen will know they are renowned for their inviting, good old-fashioned hospitality. Vaporetto is no different; the staff are warm, welcoming and take passion in their work and their food.

If you’re keen to visit the new restaurant, fear not! Vaporetto Venetian Bar & Eatery will officially open its doors on April 22, and if you can’t wait that long to live La Dolce Vita, The Bar is now open for business, also serving their Cicchetti menu (‘small tastes’).

After experiencing a small, delightful taste of what is to come from Vaporetto, we can’t wait to try the full Venetian Experience!
